  • 0.75 Rocky’s Botanical
  • 0.75 oz Lemon Juice
  • 1oz Honey/Lemongrass Syrup
  • Garnish: Dehydrated Lemon

Matthew created “ The Stage Door Canteen” a signature serve built around Dewar’s Double Double 21 Year Old Oloroso Finish for the 2026 Tony Awards season. Matthew was born and raised in Richmond, VA before moving to New York City in the late 1990s. Originally studying acting, he began bartending in 1991 and quickly found a similar passion for collaboration and creating memorable experiences through hospitality. Matthew has been with In Good Company Hospitality since 2011 and has served as Bar Manager of Winnie’s Jazz Club since 2021.

  • 0.25 oz Kirsch 0.25 oz Lemon Juice
  • 0.25 oz Simple Syrup
  • 1 oz Blood Orange Puree
  • 0.5 oz Noyaux 5 Dashes Fee Foam
  • Garnish: Lemon peel, raspberry, blackberry 

Method: Shake and double strain.

Damiano Coren, a native of Rome, Italy, has spent more than half his life working in hospitality, developing a style rooted in service, precision, and cocktail culture. His career has included roles at renowned venues including Hotel de Russie in Rome, The Dorchester in London, Employees Only, and Macao Trading Co. in New York City. A Certified Sommelier, Damiano has also worked with Amaro Lucano and consulted on beverage programs for leading hospitality groups across the U.S. and Europe. He currently serves as Director of Cocktail Programming at S.A. Hospitality Group, overseeing menu development, staff training, and beverage strategy across the organization

Blackberry Ramble

Rosemary Grapefruit Gin & Tonic
Ingredients: * 2 oz Waterloo Gin, No. 9 * 1 oz fresh grapefruit juice * ½ oz rosemary simple syrup * 2 dashes Angostura bitters * tonic water * grapefruit slice, for garnish * rosemary sprig, for garnish Directions: To start, make the rosemary simple syrup by adding half a cup of granulated sugar, half a cup of

Horchada Colada

Ingredients:

      • 1.5 Parts Hornitos Cristalino Reserve Tequila
      • .5 Parts Lime Juice
      • 1 Parts Pineapple Juice
      • 3 Parts Horchata Mix

Garnish

      • Pineapple Wedge or Fronds, Star Anise, Grated Cinnamon

Directions:

      • Pour pulverized green rock sugar, granulated white sugar, and a cinnamon & pulverized red sugar blend onto separate areas of a plate. Coat half of the cocktail glass rim with lime juice. Divide that coated half into three equal sections, then dip each section into one of the three mixtures to create distinct stripes. Set aside. Combine ingredients in a cocktail shaker with ice. Shake and strain into a rocks glass over fresh ice.

Jalisco Sunrise

Ingredients:

      • 1.5 Parts Hornitos Reposado Tequila
      • 1 Parts Triple Sec
      • 1.5 Parts Mango Nectar
      • 1.5 Parts Orange Juice
      • .5 Parts Pineapple Juice
      • 1 Parts Hibiscus Syrup, to float

Garnish:

      • Orange Slice, Edible Flowers

Directions:

      • Build cocktail ingredients (except hibiscus syrup) in a tall glass over ice and gently stir to combine. Add hibiscus syrup last so it will "sink" to the bottom of the glass.

Flaqui Margarita 

Ingredients: 

      • 2 Parts Hornitos Blanco Tequila
      • 1 Parts Fresh Lime Juice
      • .5 Pure Agave Syrup

Garnish:

      • Chamoy Rim with Tajin®, Mint Bouquet

Directions: 

      • Pour Tajin® and chamoy onto a plate. Dip a cocktail glass into chamoy and then into the Tajin®. Set aside. Combine ingredients in a cocktail shaker with ice. Shake and strain into prepared glass over fresh ice.
